The problem with homemade root beer is how to carbonate it. The “old-fashioned” method is to use water, extract, sugar, yeast and then to bottle it. This old-fashioned way can sometimes be the most fun and rewarding way to make your own homemade root beer. Another way to make root beer is to use a soda siphon. A soda siphon is a container that is used to force carbonate a liquid using a disposable CO2 cartridge and also act as the dispenser for the carbonated liquid. It operates like the seltzer bottles of yore that the Three Stooges used to squirt each other with.

Most root beer instructions tell you to add Champagne yeast, bottle and wait a day, then chill the bottles to prevent over-carbonation and bottle grenades. The problem is Champagne yeast likes to work cold! So we recommend ale yeast since the cold will generally stop it from working. If space is a concern, our convenient bottles of root beer extract can be made in smaller batches.

Our original #1 makes a very strong, spicy “microbrew” style root beer, #2 tastes very similar to Old Hires or Dad’s style Root Beer, and #3 has a gourmet taste like Thomas Kemper and Henry Weinhard’s Root Beer. #1 and #3 make 5 gallons per bottle and #2 makes 2.5 gallons per bottle.
